TERROIR
Clay/Limestone soil, plots with north exposure, 20 years old vines on a hillside
VINIFICATION
Plot selection of grapes by grape variety. Manual harvest, complete destemming, crushing and smooth pressing. Slow alcoholic fermentation with natural yeasts at 12°C. Maturing on the lees for three months and agitation of the lees regularly. Many racking during the winter. Put in the inox tank for natural decanting during the winter. No fining. Tight plaque filtration prior to bottling in spring.
FOOD AND WINE PAIRING
Balance and purity for this rich and fleshy wine. With a length in mouth and a lot of fat, this dry wine is perfect to accompany white meat, fish, seafood, or cheese such as stilton and goat cheese.
AGING
One year for freshness, and up to 5 years for more complexity.
