Jean Salen, who first worked as an arboriculturist, created the cellar in 1976 on the land of his ancestors. His great-grandfather was already the farmer of the Bastides. Julien, his father, was one of the founders of the winemaking co-operative in Puy-Sainte-Réparade.
Jean Salen is very attached to Provence and its traditions, and he wanted to revive the Vin Cuit, which was totally forgotten at the time. He conducted research, consulted archives, met Marie Mauron and finally developed the first cooked wine in 1975. This was followed by the construction of the cave and the creation of wines in three colors.
With the help of his wife Anne-Marie, they worked to position the wines as reference wines within the appellation.
