BLENDING
80% Grenache, 20% Cabernet-Sauvignon
TERROIR
Clay/limestone soil, plots with north exposure, more than 35 years old vines on a hillside
VINIFICATION
Plot selection of grapes by grape variety. Manual and mechanical harvest at perfect ripeness. Complete destemming, and soft crushing. Alcoholic fermentation of the grape variety separately with natural yeasts in inox tank. 12 to 15 days of maceration.
After one year in a tank, the wine is put in 50hl oak large barrels for approximately 16 months. Bottling following a soft place filtration or even without filtration. Maturation for at least 3 years.
FOOD AND WINE PAIRING
Its structure and intensity make this wine the perfect choice to elevate any dining experience, even spicy ones, but especially grilled meat, rabbit or provençal cuisine.
AGING
A keeping potential of 7 to 10 years, but as for many of our cuvées, it is also a delight straight away.
