55% Grenache, 40% Cabernet-Sauvignon, 5% Mourvèdre
TERROIR
Clay/Limestone soil, plots with north exposure, more than 35 yeas old vines on a hillside
VINIFICATION
Manual harvest at optimum ripeness.
Complete destemming, and soft crushing.
Alcoholic fermentation of the grape varieties separately with natural yeasts in inox tank18 days of maceration and daily pumping-over.
After one year in a tank, the wine is put in 50hl large oak barrels for 18 month. Bottling following a soft place filtration or even without filtration.
Maturation duration : at least 3 years.
ACCORD
Valéria is perfect with game, meat cooked in sauce, stew, leg of lamb and also with mature cheeses.
GARDE
Undoubtedly a vintage for keeping (up to 20 years), but as for many of our cuvées, it is also a delight straight away.
